Ingredients:
- 3/4 cup corn meal/polenta
- 1 cup alternative flour (rice, almond, soy, kamut, spelt...)
- 3 Tbsp honey
- 3 tsp baking powder
- 1/2 tsp salt
- 1 cup soymilk
- 1 beaten egg
- 2 Tbsp olive oil
Mix dry ingredients together. Add wet ingredients. Blend well. Spoon into a greased 8" square pan.
Bake 15 min @ 400 degrees in a convection oven.
