RICE MUFFINS
1 1/2 cup rice flour or other allowable flour
1/2 tsp salt
2 tsp baking powder or 2 tsp bakers ammonia(corn free)
1/4 tsp baking soda
4 Tbsp allowable oil
1/4 cup fruit puree
1 cup water or milk
Mix and spoon into greased muffin tins and bake at 350 degrees for 15 to 20 minutes . Makes 12 muffins
