- 1 tbsp lemon
- 3 tbsp extra-virgin olive oil
- 3 tbsp tahini
- 2 tbsp white wine vinegar
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp pepper
- 1 yellow pepper, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 2 can chickpeas, drained and well-rinsed
- 1 cucumber, peeled and diced
- 2 cups lightly packed parsley, finely chopped
- ½ cup raisins
Directions
1. Place all ingredients in a large bowl and mix well.
2. Store leftovers in fridge for up to 3 days
