Bell Pepper and Chickpea Salad

Ingredients:
  • 1 tbsp lemon
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp tahini
  • 2 tbsp white wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 2 can chickpeas, drained and well-rinsed
  • 1 cucumber, peeled and diced
  • 2 cups lightly packed parsley, finely chopped
  • ½ cup raisins
Directions

1. Place all ingredients in a large bowl and mix well.
2. Store leftovers in fridge for up to 3 days

makes about 4 servings

Roasted Garbanzo Beans

Ingredients:
  • 1 can garbanzo beans, drained and rinsed
  • 1 1/2 tablespoon olive oil (or allowed oil)
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder (or allowed seasoning)
  • 1/4 teaspoon cayenne pepper (or allowed seasoning)
  • zest of 1 lime (or in the case of LEAP zest of 1 lemon)

Mix all ingredients together. Spread on baking pan. Bake at 400 for 20 minutes. Stir and continue baking for 10 - 15 minutes or until crunchy.

Keeps great in an airtight container.

Turkey Taco Chili

Ingredients:
  • 1 Tbsp olive oil
  • 3 stalks celery, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 lbs ground turkey
  • 2- 14 ounce cans of kidney beans drained and rinsed
  • 1- 28 ounce can crushed tomatoes
  • 1- 16 ounce jar of salsa
  • 1- 8 ounce can of tomato paste
  • 2 cups frozen corn
  • 1 package taco seasoning (or homemade)
  • 1 Tbsp cumin
  • 1 Tbsp chili powder


Directions:
1. heat olive oil in large soup pot over medium-high heat. Add the celery and onion and cook until just tender and fragrant, about 5 minutes. Add the garlic and ground turkey. Cook until turkey is browned, about 5 more minutes. Do not drain.
2. Add in the kidney beans, crushed tomatoes, salsa, tomato paste, corn, taco seasoning, cumin, and chili powder. Bring to a boil, reduce heat and simmer for 30-45 minutes, or until thick and bubbly. Serve.


* can also be cooked in a crock pot. Just toss everything in and cook on low for 6-8 hours or high for 4-6 hours, making sure to stir it a few times.

Egg White Protein Oatmeal

Makes 1 Serving


Ingredients:
  • 1/2 cup quick cooking oats (you can use regular oats but the cooking time will be a little bit longer)
  • 1 ripe banana
  • 1/2 cup milk of your choice
  • 3/4 cup liquid egg whites
  • 1/2 tsp cinnamon
Directions:
1. Peel and mash banana
2. Stir banana and remaining ingredients together in a medium-sized bowl with room at the top so the oats can expand in the microwave with out spilling
3. Microwave on high for 3 minutes, stirring after 75 seconds and then again every 30 to 45 seconds until three minutes are up.
4. Top with your favorite toppings and enjoy.

Turmeric Smoothie

Anti-inflammatory and immune boosting!


Ingredients:
  • 1 cup full fat coconut milk (can substitute any other milk or yogurt)
  • 2 bananas
  • 1/2 tsp ground ginger
  • 2 tsp ground turmeric
  • 1 Tbsp honey or maple syrup (optional)
  • 1/2 tsp vanilla extract
  • 6-8 ice cubes (more if needed)
Directions: Place all ingredients in a blender of food processor and blend until smooth and creamy.

Rainbow Salad with Avocado Basil Dressing



Salad Ingredients:

  • 1 large head romaine lettuce
  • 1/2 small head of red cabbage
  • 8 oz cherry tomatoes
  • 1 english cucumber
  • 1 yellow bell pepper
  • optional: garbanzo beans, black beans, corn, fresh herbs..
Dressing Ingredients:
  • 1 avocado
  • juice from 1 lemon
  • 3/4 cup lightly packed fresh basil
  • 1-2 cloves garlic
  • 1 tsp honey/agave
  • 1/4 cup olive oil
  • 1/4 cup water
  • 2 Tbsp white wine vinegar
  • 1/4 tsp salt
Directions:
Make dressing: place all dressing ingredients in blender and blend until smooth. Taste and add more lemon or seasonings if necessary. Place in fridge to let flavors mingle while you make the salad. 
Chop all vegetables and place in a large bowl and toss to combine. Top with dressing and serve.

Zucchini Italiano


Ingredients:
·         6 small zucchini, cut into ¼ inch slices
·         2 Tbsp butter
·         1 cup water or milk
·         3 Slightly beaten eggs
·         1 tsp sat
·         2 tsp basil

Directions:
Put zucchini in 1 ½-qt casserole. Dot with butter. Bake at 400 degrees for 15 minutes. Combine and pour remaining ingredients over zucchini. Set casserole in a shallow pan with one inch hot water. Bake at 350 degrees for 40 minutes or until knife comes out clean.

Quinoa Chili

Ingredients:
·         1 cup uncooked quinoa, rinsed
·         2 cups water
·         1 Tbsp oil (olive or sesame)
·         1 onion chopped or 1 cup chopped leeks
·         1 jalapeno pepper, minced (optional)
·         1 tsp chili powder
·         1 Tbsp ground cumin
·         2 cups water
·         1, 28 oz can low sodium crushed tomatoes
·         1, 14 oz can of low sodium tomato sauce
·         1 green pepper, chopped
·         1 red pepper, chopped
·         1 zucchini, chopped
·         1 tsp dried oregano
·         1 tsp dried parsley
·         Salt and pepper to taste
·         2 (19 oz) cans organic black beans, rinsed, and drained, or 3.5 cups dried cooked beans
·         1 cup frozen corn, thawed
·         ¼ cup chopped cilantro (optional)
·         8 oz can mushrooms (optional)
Directions:
Bring the quinoa and water to a boil in a saucepan. Reduce the heat to medium low, cover and simmer until the quinoa is tender and the water has been absorbed (15-20 min).
While the quinoa is cooking, heat the oil in a large skillet. Add the onion or leeks until softened, then add the peppers and zucchini and sauté another few minutes, add the spices and sauté another minute.
Add water, tomatoes, drained black beans, corn, and quinoa.
Heat thoroughly

Sweet and Savory Kale

Ingredients:
·         2 Tbsp extra virgin olive oil
·         1 small onion, diced
·         2 cloves garlic, minced
·         1 Tbsp Dijon mustard
·         4 tsp white sugar
·         1 Tbsp cider vinegar
·         1 ½ cup broth or water
·         4 cups stemmed, torn and rinsed kale
·         ¼ cup dried cranberries
·         ¼ cup sliced almonds
Directions:
Heat olive oil in a large pot over medium heat. Stir in onion and garlic, cook and stir until onion softens and turns translucent, about 5 min. Stir in the mustard, sugar, vinegar, and broth and bring to boil over a high heat. Stir in the kale, cover and cook 5 minutes, until wilted.
Stir in dried cranberries, and continue boiling, uncovered, until the liquid has reduced by about half and the cranberries have softened, about 15 minutes.
Sprinkle with sliced almonds before serving.

Southwestern Black Bean, Quinoa, and Mango Medley

Ingredients:
  • One 15-ounce can black beans, no salt added, rinsed and drained, or 1 3/4 cups cooked black beans
  • 1 cup cooked quinoa
  • 1 cup frozen corn
  • 1 small red bell pepper, chopped
  • 1 cup chopped fresh mango
  • 1/4 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro (or 2 tsp dried)
  • 1 small jalapeno pepper, seeded and finely diced
  • Juice from 1 medium lemon
  • 1 1/2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp chilli powder
  • 1/4 tsp ground tumeric
Directions

1. Mix together the beans, quinoa, corn, bell peppers, mango, onion, cilantro, and jalapeno in a mixing bowl.
2. Whisk together the lemon juice, olive oil, garlic, cumin, chili powder, and tumeric in a small bowl. Drizzle over the mixture and toss. Refrigerate until serving time.

Variations: substitute kidney or pinto beans for the black beans or use cooked barley, bulgur, rice, or farro instead of the quinoa

Lentil and Almond Burgers



Ingredients:
  • 6 cup water
  • 1 cup brown lentil or green French lentil
  • 2 Tbsp extra-virgin olive oil, divided
  • ¾ cup finely chopped carrots
  • 2 finely chopped medium shallot
  • 1 finely chopped celery
  • ¼ cup sliced almond
  • 1 tsp chopped fresh thyme
  • ½ tsp salt
  • ¼ tsp freshly ground pepper
  • 1 large egg yolk, beaten
  • 1 Tbsp lemon juice

Directions


1.Bring water to a boil in a large saucepan. Stir in lentils, reduce heat to medium-low and simmer until very tender and beginning to break down, about 25 minutes for brown lentils or 30 minutes for green lentils. Drain in a fine-mesh sieve.

2.Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat. Add carrot, shallots and celery and cook, stirring, until softened, about 3 minutes. Add almonds, thyme, salt and pepper; continue cooking until the almonds are lightly browned, about 2 minutes. Transfer the mixture to a food processor; add 1 cup of the cooked lentils. Pulse several times, scraping down the sides once or twice, until the mixture is coarsely ground. Transfer to a large bowl; stir in the remaining lentils. Let cool for 10 minutes. Mix in egg yolk and lemon juice. Cover and refrigerate for 1 hour.

3.Form the lentil mixture into 5 patties. Heat the remaining 1 tablespoon oil in a large nonstick skillet, preferably cast-iron, over medium-high heat. Add the patties and cook for 3 to 4 minutes. Turn gently and continue to cook until lightly browned and heated through, 3 to 4 minutes more. Serve immediately.

Two Ingredient Pancakes










Sweet Potato Pancakes:

Ingredients:
  • 3 eggs
  • 1 cup sweet potato (boiled or baked without skin)
Directions:

Combine sweet potatoes and eggs and mix. Mixture will be a little lumpy and it is okay if it is not perfectly combined. Pour onto a greased pan and cook on low heat. Flip when the edges are completely cooked.

banana bread biscuits


Ingredients:
  • 1 mashed banana
  • 2 Tbsp vegan butter
  • 1/2 cup plus 2 Tbsp oat flour
  • 1/2 tsp baking powder
  • 2 Tbsp coconut sugar
Directions:
Mix dry ingredients in one bowl (flour, baking powder, sugar) and wet ingredients in another bowl (banana, vegan butter).


Combine until just incorporated (don’t overwork the dough).

Divide into three portions and drop onto a baking sheet that’s either greased or lined with parchment paper.

Bake for 18-20 minutes at 375 degrees F.

Amaranth Granola

Ingredients:
  • 1/4 cup apricot or peach puree
  • 1/4 to 1/2 cup maple syrup
  • 1 Tbsp oil (coconut works well)
  • 1 Tbsp vanilla
  • 3/4 tsp salt
  • 2 1/4 cup puffed amaranth
  • 1/2 cup nuts (optional)
  • 1/2 cup raw sunflower seeds
  • 1/2 cup unsulfered and diced dried apricots and peaches (other dried fruids work well too)
  • 1/2 cup grated unsweetened coconut (optional)
Directions
1. Preheat oven to 375 degrees F. Lightly grease a 13 x 9-inch cake pan.
2. In a large mixing bowl, mix puree, syrup, oil, vanilla, and salt. Add amaranth, nuts, seeds, dried fruit, and coconut. Stir enough to coat dry ingredients
3. Spread in the cake pan and toast for 20-25 minutes, stirring frequently. The edges tend to burn faster than the rest of the granola and so should be watched carefully.
4. Cool and store in an airtight container. Eat within two weeks.

Raw Banana Cream Pie


Makes about 12 servings

Crust Ingredients:
  • 1 cup cashews
  • 1 cup dried, unsweetened coconut
  • 1/2 cup dates, pitted
  • 1/4 tsp sea salt
Banana Filling:
  • 2 medium bananas
  • 3/4 cup cashews
  • 1/4 cup honey (agave or maple syrup also works)
  • 1/4 cup lemon juice
  • 1/3 cup coconut oil
  • 1 tsp vanillla
  • 1/8 tsp sea salt
Directions:

1. Place all ingredients in the food processor. Process until the mixture sticks together and the dates are well processed.

2. Dump crust mixture in into a glass dish/pie pan. press the crust down firmly in the pan with your hands.

3. Add the banana filling ingredients in your blender. Blend until creamy and smooth.

4. Pour banana cream filling into crust. Smooth out with the back of a spoon.

5. Cover and throw in the freezer. Ideally should be frozen overnight to firm up so it can be sliced.

6. This raw banana cream pie should always be kept in the freezer (It'll get soggy if in the fridge).

Lentil and Brown Rice Casserole

Serves 4

Ingredients:
  • 1 Tbsp extra virgin olive oil
  • 1 medium red onion, chopped
  • 1 to 2 cloves garlic, crushed
  • 2 large carrots, diced
  • 1 1/2 tsp dried thyme
  • 1 tsp garam masala
  • 1 tsp sea salt
  • 2 cups frozen chopped spinach
  • 2 tbsp red wine vinegar
  • 3/4 cup green lentils
  • 1/2 cup brown basamati rice
  • 4 cups water
Directions:

1. Preheat oven to 350 degrees F.

2. In an oven-proof pot, heat olive oil over medium heat. Add chopped red onion and crushed garlic. Saute for about 3 minutes, stirring frequently. Then add the diced carrots, dried thyme, garam masala, and sea salt; stir to coat with olive oil. Saute for a few minutes more then add the chopped spinach and stir.

3. Wait until the spinach has thawed and the mixture is sizzling again, then add the red wine vinegar and stir to remove any browned bits. Quickly add the lentils, brown rice, and water, mix well.

4. Place into a covered pot in the preheated oven and bake for 1 hour and 25 minues.

Split Pea Soup


Ingredients:
  • 1 1/2 cups dried split peas
  • 4 cups water
  • 1 small onion (chopped)
  • 3/4 cup carrot (chopped)
  • 2 Tbsp nutritional yeast flakes (optional)
  • 1 Tbsp toasted sesame oil or olive oil
  • 1 tsp each: ground cumin, garlic powder, and salt
  • 1/2-1 tsp liquid smoke (optional)
  • pinch of ground black pepper
Instructions

1. Pick through peas, discarding any foreign matter. Rinse peas.
2. In large pot, combine all ingredients. Bring to boil, reduce heat, cover, and simmer 1 hour, or until peas are tender. Stir occasionally.
Note: for creamy soup, let soup cool, then blend until smooth, and reheat. Refrigerate leftovers and use within 7 days or freeze.

Sweet Potato Pie



Ingredients:
  • 1 yam
  • 1 sweet potato
  • 1/2 cup coconut milk
  • 1/4 cup almond butter
  • 3 tsp cinnamon
  • 2 tsp balsamic vinegar
  • 1 1/2 tsp ginger
  • 1 1/2 tsp nutmeg
  • 1/2 tsp cardamon
  • 1 tsp cloves
  • 2 eggs
Directions:

Preheat the oven to 350 degrees. Peel and chop the yams and sweet potatoes into cubes. Boil the yams and potatoes in water until soft; around 10 to 15 minutes. Drain the water, then mash well and add the coconut milk, nut butter, vinegar, and spices. Mix, then add the eggs. Continue mixing until the pie is uniform and smooth.

Grease a 6-inch baking dish with coconut oil. Pour the pie mix into the dish, then bake for 30-35 minutes. Allow to cool, then cut into squares and serve. This can be prepared a day ahead of time, and you can serve it cold.

Some options: Sprinkle the top with cinnamon, nutmeg, and ginger. Top with pecans.

Raw Chocolate Banana Avocado Pudding

Ingredients:


  • 1 very ripe medium sized banana
  • 1/2 avocado
  • 2 tsp cocoa powder
  • 1/2 tsp vanilla
Directions

Place all ingredients in a blender and blend until smooth. If you don't have a blender you can also use a fork to mash all the ingredients together. Best if eaten immediately after making.

Apricot Quinoa Cereal

Ingredients:
  • 1 1/2 cups water
  • 1/2 cup quinoa
  • 1 cup apricot nectar
  • 1/2 cup millet
  • 1 cup chopped dried apricots
  • 1/4 cup low-fat cottage cheese
  • 1/2 tsp ground cinnamon
  • 2 Tbsp maple syrup
  • 1/2 tsp ground mace
Directions:

In a 2 quart saucepan, bring the water, apricot nectar, apricots, cinnamon, and mace to a boil. Rinse the Quinoa according to the package instructions. Add the quinoa and millet to the saucepan. Reduce the heat to a simmer. Partially cover the pan and cook until the liquid is absorbed and the grains are tender, 15 to 20 minutes. Press the cottage cheese through a sieve into a small bowl. Stir in the maple syrup. Stir the mixture into the cereal. Serve warm.
