5 Ingredient Spelt Flatbread

Ingredients:
  • 2 cups + 2 Tbsp light spelt flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup almost boiling water
  • 1 Tbsp extra virgin olive oil


Directions:
1. In a large bowl, whisk together the flour, salt, and baking soda.
2. Stir in the hot water and oil until it forms a dough.
3. Knead the dough with your hands for about 15 times, soaking up the extra flour at the bottom of the bowl as you go. If the dough is still wet, add some more flour and knead again.
4. Shape dough into a ball and place in the bowl. Cover with a tea towel to prevent from drying out.
5. Preheat a large skillet over medium heat.
6. Grab a chunk of dough just larger than a golf ball. Shape the ball and sprinkle on some spelt flour to coat lightly.
7. Place a large nonstick baking mat on the counter and flour a rolling pin. You can also use parchment paper instead of a nonstick mat. Sprinkle the mat with a dusting of four.
8. Roll the dough all directions into a circular shape until it's paper thin. It's okay if it's not a perfect circle. Drizzle with a tiny bit of olive oil and spread it out to coat the entire surface.
9. Place the tortilla on the preheated skillet, oil side down. Cook over medium heat for around 30 seconds and then flip it with a spatula and cook for another 30 seconds or so. Cooking for too long may cause it to tear or dry out.
10. Place cooked tortillas on a plate and cover with a tea towel to prevent drying. Repeat steps for the rest.
11. Store leftovers on a plate with a lightly damp paper towel spread out on top. Cover the plate with plastic wrap and place in fridge.


Makes about 6 large or 8 small tortillas

Quinoa Flour Muffins



Ingredients
·         2 cups quinoa flour
·         2 ½ tsp aluminum-free baking soda
·         1 tsp white vinegar
·         ½ tsp sea salt
·         4 Tbsp allowed oil or mango puree
·         1 cup allowed milk
·         2 eggs, or 2 Tbsp tapioca flour or ground flax seed mixed with 6 Tbsp warm water, or 2 mashed banana, or other safe egg substitute
·         ½ cup maple syrup or other allowed sweetener
·         2 cups dried cranberries or other dried or frozen fruit, berry, or nuts
Directions
1.       Preheat oven to 375 degrees F. Line muffin tin with paper muffin cups.
2.       Mix together the flour, baking soda, and salt in a large bowl and set aside.
3.       Whisk together the milk or water, oil or fruit puree, eggs or egg substitute, maple syrup in a smaller bowl and add to the dry mixture. Stir well. The batter will be very thick.
4.       Add the berries and/or nuts and fold into the batter.
5.       Ladle the batter evenly between 12 cups. Bake for 22-25 minutes until the tops are golden brown and a wooden toothpick inserted comes out clean. Move to a wire rack to cool completely before storing or freezing.

Coconut Flour Banana Bread




Coconut flour is gluten and sulfite free. It is high in fiber and protein. 
In baking, you cannot substitute coconut flour for wheat or other grain-based flours at a 1:1 ratio.  They are not equivalent.
Coconut flour is extraordinarily absorbent and very little coconut flour is needed to successfully produce a recipe.  In baked goods, you generally want to substitute 1/4 cup to 1/3 cup coconut flour for 1 cup grain-based flour.  You will also need to increase the number of eggs.  In general for every one cup of coconut flour you use, you will need to use six beaten eggs in your recipe in addition to approximately one cup liquid such as coconut milk.  When baking with coconut, it is best to use established recipes rather than waste considerable expense and time with experimentation.

 Coconut flour is dense and can also be dry.  Every flour has its peculiar characteristics and baked goods made with coconut flour tend to be dense and dry.  To reduce dryness, make sure you’re using plenty of eggs and you can also add cooked, pureed or mashed fruit or vegetables to your baked goods to increase the moisture.
Coconut flour adds a coconut flavor to your baked goods.

Coconut Flour Banana Bread

Ingredients:
  • 3 ripe bananas
  • 2 eggs
  • 2 Tbsp chia seeds
  • 6 Tbsp water
  • 20 drops liquid stevia (I ~2 tsp of powdered stevia, you could also substitute your allowed sweetener
  • ½ cup coconut oil melted
  • 2 Tbsp milk
  • 1 tsp vanilla
  • 1 cup coconut flour
  • ½ tsp baking soda


Directions

  • 1.     Heat oven to 350 degrees
  • 2.     Mix chia seeds and water and set aside
  • 3.     Mash banana and mix with wet ingredients
  • 4.     Add chia to mixture
  • 5.     Add flour and baking soda and mix until combined
  • 6.     Bake for 40 min


This makes dense and slightly crumbly bread but it has a good flavor and is very filling.

Blueberry Banana Oatmeal Bread



Ingredients:
  • 1 3/4 cup of oat flour [you can just grind GF oats in a food processor]
  • 2 tsp baking powder
  • 1 tsp sea salt
  • 1/3 cup brown sugar or allowed sweetener 
  • 2 tablespoons of ground flax [mixed with 1/4 cup warm water] or 1 egg
  • 3 extra ripe bananas mashed 
  • 1/2 cup unsweetened applesauce
  • 1/3 cup unsweetened almond milk
  • 1 cup frozen blueberries
Directions:

Add all dry ingredients to a mixing bowl and mix together. Add in the mashed banana, applesauce, flax/egg, and almond milk. Mix until just combined (mixture will be lumpy). Fold in blueberries. Pour into a greased loaf pan or 12 muffin cups. Bake at 350 degrees for 45-60 min (until top and edges are browned).

banana bread biscuits


Ingredients:
  • 1 mashed banana
  • 2 Tbsp vegan butter
  • 1/2 cup plus 2 Tbsp oat flour
  • 1/2 tsp baking powder
  • 2 Tbsp coconut sugar
Directions:
Mix dry ingredients in one bowl (flour, baking powder, sugar) and wet ingredients in another bowl (banana, vegan butter).


Combine until just incorporated (don’t overwork the dough).

Divide into three portions and drop onto a baking sheet that’s either greased or lined with parchment paper.

Bake for 18-20 minutes at 375 degrees F.

Zuchini Oat Bread

Ingredients:
  • 1 zucchini, shredded
  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 tbsp ground flax
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup brown rice, honey, or maple syrup
  • 1/4 cup oil (canola or coconut)
  • optional: shredded coconut, carob chips, walnuts, etc.
  • splash of rice/almond/soy milk if mixture is too dry

Directions:


Pre-heat oven to 375.

Shred zucchini. In a large mixing bowl, add the rest of ingredients. Mix and add in the zucchini. Let the batter sit for a few minutes (to give the flax some time to “gel”).

Add whatever mix-ins you’d like.

Pour into two mini loaf pans (sprayed with non-stick) or one large loaf pan. Bake for 25 minutes on 375 degrees.

* Mixture is very crumbly when hot, allow to cool before cutting or taking out of pan

Alternative Corn Bread


Ingredients:
  • 3/4 cup corn meal/polenta
  • 1 cup alternative flour (rice, almond, soy, kamut, spelt...)
  • 3 Tbsp honey
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 cup soymilk
  • 1 beaten egg
  • 2 Tbsp olive oil
Directions:
Mix dry ingredients together. Add wet ingredients. Blend well. Spoon into a greased 8" square pan.
Bake 15 min @ 400 degrees in a convection oven.

Makes approx 12 servings

Yeast Free Bread

Ingredients:
· 3 cups whole grain flour - preferably organic (i.e. whole wheat, barley, rye, oat, spelt, kamut, and etc.).

Note: If using non-glutenous flours such as rice, millet, buckwheat, amaranth, corn, potato and etc., they will not hold together well unless mixed with glutenous flour(s) or a binding agent such as egg.

· 1 1/2 cups (~ 360 ml) distilled/purified water
· 1 TBS. (non-aluminum) baking powder (Featherweight or Rumford)
· 1 TBS. Olive Oil
· 1/4 - 1/2 tsp. sea salt

Batter Preparation and Cooking:
Mix liquids and dry ingredients separately; then combine and mix well

Place in greased and floured 9" x 5" loaf pan or 9" x 9" cake pan or completely line pan with unbleached parchment paper.

Bake at 375 F (middle rack of pre-heated oven) for 50 - 55 minutes.

When bakers pick comes out clean and top is light to medium brown, bread is ready to cool on rack. Let cool in pan for at least 1/2 hour. Do not cut until bread has completely cooled.

Quinoa Irish Soda Bread



Preheat oven to 350°F
Grease two mini metal loaf pans (6x3 inches)
Makes 2 small loaves

2 cups quinoa flour
1-3/4 tsp baking powder
1-1/2 tsp caraway seeds
1/2 tsp fine sea salt
1/4 tsp baking soda
1 cup plus 1 tbsp buttermilk
1/2 cup golden raisins

1. In a large bowl, whisk the quinoa flour, baking powder, caraway seeds, salt, and baking soda.
2. Add the buttermilk and raisins and mix until blended. Divide dough between prepared pans, spreading evenly.
3. Bake 25 to 35 minutes until golden brown and a toothpick inserted in middle comes out clean. Let cool in pans 5 minutes, then remove from pans and cool completely on racks.Homemade Buttermilk If you don't have buttermilk, it's easy to make a substitute. Mix 1 tbsp (15 mL) lemon juice or white (or cider) vinegar into 1 cup (250 mL) milk. Let stand for at least 15 minutes before using, to allow the milk to curdle. Any extra can be stored in the refrigerator for the same amount of time as the milk from which it was made.

Kamut Bread (no yeast, no eggs)

Ingredients
• 3/4 cup Canola Oil
• 1/2 tsp Baking Soda
• 1 tsp Cream of Tartar
• 3 Tb Honey
• 2 cups Water
• 4 cups Organic Kamut Flour
Directions
Whisk together 2 cups of kamut flour, cream of tartar, water, the honey and oil in a medium bowl. Cover with damp cloth and let stand overnight (10 hours).

Add 1 cup of kamut flour into dough mixture until it is elastic (20 minutes). Cover and let rest for one hour.

Add the last 1 cup of kamut flour to the dough and knead until gluten is developed (as much as 30 minutes).

Place dough in lightly oiled loaf pan, cover and leave to rise for 4-6 hours.

Preheat oven to 350°F and bake for 40 minutes. Use toothpick method to test for doneness.

Yield: 1 loaf (approx 24 servings)

CARROT BREAD

1 cup raw carrots, shredded
3/4 cup maple syrup, sugar or rice syrup
1/2 cup allowable oil (sunflower is good)
1 1/2 cup oat flour (other allowable flour can be used)
2 tsp baking powder or bakers ammonia (if corn sensitive)
1 tsp nutmeg (optional)
1/2 cup dried fruit
1/4 cup chopped nuts (optional)

Preheat oven to 350 degrees
Green the bottom of a 9 x 5 inch or 8 x 4 inch loaf pan

In large bowl, combine the carrots, sweetener and oil. Stir for 1 minute.
In a smaller bowl, add the dry ingredients and blend. Add to carrot mixture and stir until just combined. Mix in the raisins and nuts and pour into the loaf pan. Bake for 1 hour or until a tester inserted in the center comes out clean. Remove from the pan and cool completely.

YEAST FREE BREAD

Yeast Free Bread

Makes; 12 servings

Ingredients:
3 cups of whole grain flour (i.e. whole wheat, barley, rye, oat, kamut, etc)

1 1/2 cup water
1 Tb baking powder
1 Tb oil
1/4-1/2 tsp salt

Instructions:
Mix liquids and dry ingredient separately, then combine and mix well
Place is a greased and floured 9 x 5 inch loaf pan and Bake 375 degree for 50-55 minutes
When knife comes out clean and top is light to medium brown bread is ready to cool on a rack. Let cool in span for at least 1/2 hour. Do not cut the bread until completely cooled.

LIVING WITHOUT BREAD


"We live in a world dependent on bread, but do you really need it? Here are some great substitutions if you find yourself missing bread.

ROLL UP WITH GREENS: use lettuce, cabbage or cooked collard green leaves. Wrap your favorite sandwich fillings in these instead of using bread

SPRING ROLL WRAPPERS: Spring roll wrappers can be made from rice or tapioca . All you need to do is soak them in water for 45 seconds and you can use them for everything. Roll up nut butters and fruit, veggies and tofu, scrambled eggs or meat and veggies. The wrappers can keep in the refrigerator for a long time, unlike bread.

TOP YOUR HOT CEREAL: Instead of peanut butter on bread, cook your favorite hot cereal and top it off with an allowable nut butter(add sweetners or jelly if desired).

EGGPLANT SANDWICH: Grill slices of eggplant, place a filling of cheese, tomato, lettuce or other allowable veggies, tofu between 2 slices of the grilled eggplant. For more protein add dip the eggplant in egg and allowable flour before grilling.

ZUCCHINI ROLL UPS: Thinly slices zucchini, place small amounts of cheese, sandwich filling in one end and roll up. Secure with a toothpick until ready to eat.
